A quick and delicious Texas Tamale Pie Casserole that can be prepared and baked in just 30 minutes.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 package (8.5 oz) cornbread mix
  • 1 cup milk
  • 1 egg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
  4. In a separate bowl, mix cornbread mix, milk, and egg until well combined.
  5. Spread the beef mixture evenly in a greased casserole dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 20-25 minutes or until the cornbread is golden brown.
  9. Let it cool for a few minutes before serving.
