A delicious and nutritious Southwest Breakfast Frittata packed with black beans, peppers, and avocado, perfect for a flavorful start to your day.

Ingredients

  • 6 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup bell peppers, diced
  • 1 avocado, diced
  • 1/2 cup onion, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté onions and bell peppers until soft.
  3. In a bowl, whisk together the eggs, cumin, chili powder, salt, and pepper.
  4. Add the black beans to the skillet and stir to combine.
  5. Pour the egg mixture over the vegetables and beans in the skillet.
  6. Cook for 3-4 minutes until the edges start to set.
  7. Sprinkle cheese on top and transfer the skillet to the oven.
  8. Bake for 15-20 minutes or until the frittata is set and lightly golden.
  9. Remove from the oven and let cool slightly before topping with diced avocado.
  10. Slice and serve warm.

Notes

  • Feel free to add other vegetables like spinach or zucchini.
  • This frittata can be made ahead of time and reheated.
