A delicious and easy-to-make sheet pan breakfast frittata that serves the whole family, packed with vegetables and protein.

Ingredients

  • 12 large eggs
  • 1 cup milk
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup chopped spinach
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Add the diced bell peppers, onions, chopped spinach, and shredded cheese to the egg mixture.
  4. Season with salt and pepper, and mix well.
  5. Grease a sheet pan with olive oil.
  6. Pour the egg mixture into the prepared sheet pan.
  7. Bake in the preheated oven for 25-30 minutes, or until the frittata is set and lightly golden on top.
  8. Allow to cool slightly, then slice and serve.
