Ingredients
Scale
1 cup unsalted butter
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup cocoa powder
1/2 teaspoon salt
8 oz cream cheese, softened
1/2 cup powdered sugar
1 cup fresh raspberries
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, melt the butter and mix in the granulated sugar until well combined.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In another bowl, whisk together the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a separate bowl, beat the cream cheese and powdered sugar until smooth.
Spread half of the brownie batter into the prepared pan, then dollop the cream cheese mixture on top.
Drop the remaining brownie batter over the cream cheese layer and swirl with a knife.
Scatter the fresh raspberries on top and gently press them into the batter.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool before cutting into squares and serving.
Notes
For a richer flavor, use dark chocolate cocoa powder.
Fresh raspberries can be substituted with frozen ones, but make sure to thaw and drain them first.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
