Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 cups fresh peaches, diced
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 1/2 teaspoon cinnamon

Instructions

  1. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  2. Fold in the whipped cream until well combined.
  3. In another bowl, mix the diced peaches with lemon juice and set aside.
  4. In a separate bowl, combine graham cracker crumbs, melted butter, and cinnamon to create the crust.
  5. Layer the crust mixture at the bottom of each cup.
  6. Add a layer of the cheesecake mixture on top of the crust.
  7. Top with the diced peaches.
  8. Repeat the layers until the cups are filled.
  9. Chill in the refrigerator for at least 2 hours before serving.
