A delicious and easy one-pan meal featuring Thai basil chicken and rice, perfect for a quick dinner.

  • 1 lb chicken breast, diced
  • 2 cups jasmine rice
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 1 cup fresh Thai basil leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the vegetable oil over medium heat.
  3. Add the minced garlic and sauté until fragrant.
  4. Add the diced chicken and cook until browned.
  5. Stir in the jasmine rice, chicken broth, coconut milk, soy sauce, fish sauce, and red pepper flakes.
  6. Bring the mixture to a boil, then reduce heat to low and cover.
  7. Simmer for about 15 minutes, or until the rice is cooked and liquid is absorbed.
  8. Stir in the Thai basil leaves.
  9. Transfer the skillet to the oven and bake for an additional 10 minutes.
  10. Remove from the oven, fluff the rice, and serve hot.
