A delicious and easy-to-make One-Pan Pulled Chicken Enchilada Pie that combines the flavors of enchiladas in a convenient pie form.

  • 2 cups shredded cooked chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 package (8 oz) refrigerated crescent roll dough
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, enchilada sauce, chili powder, cumin, salt, and pepper.
  3. Unroll the crescent roll dough and press it into the bottom and up the sides of a greased pie dish.
  4. Pour the chicken mixture into the pie crust and spread it evenly.
  5. Top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the cheese is bubbly.
  7. Let it cool for a few minutes before slicing and serving.
