- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup rice
- 2 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1/2 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix well and form into meatballs.
- In a large skillet, heat a little oil over medium heat. Add the meatballs and cook until browned on all sides.
- Add the rice to the skillet and stir to combine with the meatballs.
- Pour in the chicken broth and diced tomatoes. Bring to a boil.
