A delicious and easy-to-make one-pan dish featuring Mediterranean-style meatballs served over rice.

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup rice
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1/2 cup olives, sliced
  • 1/4 cup feta cheese, crumbled

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix well and form into meatballs.
  2. In a large skillet, heat a little oil over medium heat. Add the meatballs and cook until browned on all sides.
  3. Add the rice to the skillet and stir to combine with the meatballs.
  4. Pour in the chicken broth and diced tomatoes. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  6. Stir in the olives and feta cheese before serving.

  • Feel free to substitute ground turkey or chicken for a lighter option.
