  • 6 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Stir in the grated Parmesan cheese, spinach, cherry tomatoes, basil, and parsley.
  4. Heat olive oil in a large oven-safe skillet over medium heat.
  5. Pour the egg mixture into the skillet and cook for 3-4 minutes until the edges start to set.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is puffed and golden.
  7. Remove from the oven and let it cool for a few minutes before slicing.
