1 lb steak (sirloin or ribeye)
1 lb baby potatoes, halved
2 tablespoons olive oil
Salt and pepper to taste
1 cup fresh parsley, chopped
1/4 cup red wine vinegar
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 cup olive oil (for chimichurri)
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper.
Spread the potatoes on a baking sheet and roast for 20 minutes.
While the potatoes are roasting, prepare the chimichurri by mixing parsley, red wine vinegar, minced garlic, red pepper flakes, and olive oil in a bowl.
After 20 minutes, remove the potatoes from the oven and push them to one side of the baking sheet.
Season the steak with salt and pepper, then place it on the other side of the baking sheet.
Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the steak reaches your desired doneness.
Remove from the oven and let the steak rest for a few minutes before slicing.
Drizzle chimichurri sauce over the steak and potatoes before serving.
Notes
For a spicier chimichurri, add more red pepper flakes.
Feel free to substitute the steak with chicken or tofu for a different protein option.
This dish can be served with a side salad for a complete meal.
