Lemon Sugar Cookie Bars are a delightful treat that combines the sweetness of sugar cookies with the tangy flavor of fresh lemons, perfect for any occasion.

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons lemon juice (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Spread the cookie dough evenly in the prepared baking pan.
  7. Bake for 20-25 minutes or until the edges are lightly golden.
  8. Allow to cool completely before frosting.
  9. For the frosting, mix powdered sugar and lemon juice until smooth and spread over the cooled bars.
  10. Cut into squares and serve.
