Lemon Icebox Cake is a refreshing and creamy dessert that combines layers of lemon-flavored filling and graham crackers, chilled to perfection.

  • 1 cup sweetened condensed milk
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 package graham crackers
  • 1 lemon, zested

Instructions

  1. In a mixing bowl, combine lemon juice and sweetened condensed milk until well blended.
  2. In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the lemon mixture.
  4. In a baking dish, layer graham crackers at the bottom.
  5. Spread a layer of the lemon filling over the graham crackers.
  6. Repeat the layers until all ingredients are used, finishing with a layer of lemon filling on top.
  7. Cover and refrigerate for at least 4 hours or overnight.
  8. Before serving, garnish with lemon zest.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Make sure to chill the cake for the recommended time for best results.
