Lemon Earthquake Cake is a delightful summer dessert that combines the tangy flavor of lemon with a rich, creamy texture, making it a perfect treat for warm weather.

  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup shredded coconut
  • 1 cup chopped walnuts (optional)
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. In another bowl, beat together the cream cheese and powdered sugar until smooth.
  4. Grease a 9×13 inch baking pan and pour half of the cake batter into the pan.
  5. Spread the cream cheese mixture over the batter, then pour the remaining cake batter on top.
  6. Sprinkle shredded coconut and chopped walnuts over the top.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool before drizzling with lemon juice.

  • For a stronger lemon flavor, add more lemon juice to the cream cheese mixture.
