  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup chopped pistachios
  • 1 cup kataifi pastry, shredded
  • ½ cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until smooth.
  4. Stir in boiling water until well combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes.
  6. While the cake is baking, prepare the kataifi crunch by mixing shredded kataifi pastry with melted butter and chopped pistachios.
  7. Once the cake is done, remove it from the oven and let it cool for 10 minutes.
  8. Top the cake with the kataifi crunch mixture and serve.
