Dipped Cherry Cookies are a delightful treat that combines the sweetness of cherries with a rich chocolate coating, perfect for any occasion.

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup maraschino cherries, drained and chopped
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped cherries.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let the cookies cool completely on a wire rack.
  10. In a microwave-safe bowl, melt the chocolate chips and vegetable oil together until smooth.
  11. Dip the cooled cookies halfway into the melted chocolate and place them back on the parchment paper to set.
