1/2 cup pickled carrots and daikon

1/2 cup sriracha mayo
Instructions
Preheat the oven to 425°F (220°C).
Wash and cut the russet potatoes into fries.
Toss the fries in a bowl with vegetable oil, salt, and black pepper.
Spread the fries in a single layer on a baking sheet.
Bake for 25-30 minutes or until golden and crispy, flipping halfway through.
