Cinnamon Roll Cookies are a delightful fusion of classic cinnamon rolls and cookies, offering a soft, chewy texture with a sweet cinnamon flavor.

  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1/2 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, mix the ground cinnamon with a little sugar to create the cinnamon filling.
  7. Roll the cookie dough into balls and then roll them in the cinnamon sugar mixture.
  8. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. While the cookies are baking, prepare the icing by mixing powdered sugar and milk until smooth.
  11. Once the cookies are out of the oven, drizzle the icing over the warm cookies.
