Instructions
Preheat the oven to 325°F (163°C).
In a bowl, mix graham cracker crumbs, melted butter, 2 tablespoons sugar, and 1 teaspoon cinnamon until combined.
Press the mixture into the bottom of a 9-inch springform pan to form the crust.
In a large mixing bowl, beat the softened cream cheese until smooth.
Add 1 cup sugar and vanilla extract, mixing until well combined.
Add eggs one at a time, mixing well after each addition.
Stir in the sour cream until smooth.
Pour the cheesecake batter over the crust in the springform pan.
Bake for 55-60 minutes or until the center is set but slightly jiggly.
Mix ½ cup sugar and 2 teaspoons cinnamon in a small bowl for the topping.
Once the cheesecake is done, remove it from the oven and sprinkle the cinnamon-sugar mixture on top.
Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
