  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup sugar (for topping)
  • 2 teaspoons cinnamon (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, 2 tablespoons sugar, and 1 teaspoon cinnamon until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract, mixing until well combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in the sour cream until smooth.
  8. Pour the cheesecake batter over the crust in the springform pan.
  9. Bake for 55-60 minutes or until the center is set but slightly jiggly.
  10. Mix ½ cup sugar and 2 teaspoons cinnamon in a small bowl for the topping.
  11. Once the cheesecake is done, remove it from the oven and sprinkle the cinnamon-sugar mixture on top.
  12. Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
