  • 1 cup chopped nuts
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup rum (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, mix the flour, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and rum.
  6. Fold in the mixed dried fruits and nuts until evenly distributed.
  7. Pour the batter into a greased and floured cake pan.
  8. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
