Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 4 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup corn kernels
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in carrots, celery, and bell pepper; cook for 5 minutes.
  4. Add zucchini, vegetable broth, black beans, cumin, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper, and stir in corn kernels.
  7. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier version, add diced jalapeños.
  • This stew can be made a day in advance and tastes even better the next day.
