  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 oz) ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chicken breasts and cook until browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the broken lasagna noodles and Italian seasoning, and simmer until noodles are tender.
  5. Stir in the ricotta cheese and half of the mozzarella cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with remaining mozzarella and Parmesan cheese.
