  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 1 cup almond milk
  • 1/4 cup vegetable oil
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, brown sugar, baking powder, and salt.
  3. In another bowl, whisk together the almond milk, maple syrup, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the walnuts if using.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
