A delicious and hearty vegan lasagna made with layers of spinach, mushrooms, and a rich tomato sauce, perfect for a comforting meal.

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 1 cup vegan ricotta cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the mushrooms until soft.
  4. Add spinach to the skillet and cook until wilted; season with garlic powder, onion powder, salt, and pepper.
  5. In a baking dish, spread a layer of marinara sauce on the bottom.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the spinach and mushroom mixture, and half of the vegan ricotta cheese.
  7. Repeat the layers, finishing with a layer of marinara sauce on top.
  8. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.
  9. Let it cool for a few minutes before slicing and serving.

Notes

  • Feel free to add other vegetables like zucchini or bell peppers.
  • For a spicier kick, add red pepper flakes to the sauce.
  • This dish can be made ahead of time and stored in the refrigerator.
