  • 1 loaf of vegan bread, cubed
  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1/4 cup ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups fresh blueberries
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together almond milk, maple syrup, ground flaxseed, vanilla extract, and cinnamon.
  3. Add the cubed vegan bread to the mixture and gently fold until well combined.
  4. Fold in the blueberries and walnuts, if using.
  5. Transfer the mixture to a greased baking dish and spread evenly.
