These Vegan Berry Crumble Bars are a delicious and healthy treat, perfect for satisfying your sweet tooth without compromising on nutrition.

Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (fresh or frozen)
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mix together the rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt until well combined.
  3. Press half of the oat mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, toss the mixed berries with cornstarch and spread them evenly over the crust.
  5. Sprinkle the remaining oat mixture over the berries to create a crumble topping.
  6. Bake for 25-30 minutes, or until the top is golden brown.
  7. Allow to cool completely before slicing into bars.

  • Feel free to substitute the mixed berries with your favorite fruits.
