  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas and melted coconut oil.
  3. Add the maple syrup and vanilla extract, and mix well.
  4. In another bowl, whisk together the baking soda, salt, cinnamon, and whole wheat flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
