Ingredients

  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add diced chicken and cook until browned.
  4. Stir in carrots, celery, and potatoes; cook for 5 minutes.
  5. Sprinkle flour over the mixture and stir to combine.
  6. Gradually add chicken broth, stirring constantly.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Add frozen peas, thyme, rosemary, salt, and pepper.
  9. Stir in heavy cream and cook for an additional 5 minutes.
  10. Serve hot and enjoy!

  • For a thicker soup, add more flour.
