Turkish Eggs, also known as Cilbir, is a traditional Turkish dish featuring poached eggs served over yogurt and topped with a spicy butter sauce.

  • 1 cup plain yogurt
  • 2 tablespoons butter
  • 1 teaspoon red pepper flakes
  • 1 clove garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh dill or parsley, for garnish

Instructions

  1. In a pot of boiling water, poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
  2. While the eggs are poaching, mix the yogurt with minced garlic, salt, and pepper in a bowl.
  3. In a small pan, melt the butter over medium heat and add the red pepper flakes, cooking for about 1 minute until fragrant.
  4. Spread the yogurt mixture on a plate and carefully place the poached eggs on top.
  5. Drizzle the spicy butter sauce over the eggs.
  6. Garnish with fresh dill or parsley before serving.

Notes

  • For a creamier yogurt, use Greek yogurt.
  • Adjust the amount of red pepper flakes according to your spice preference.
  • This dish is best served immediately after preparation.
