Ingredients

1 lb ground turkey
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
6 cups chicken broth
2 cups diced vegetables (carrots, celery, and onion)
1 cup pasta (optional)
Fresh parsley for garnish
Instructions
In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
In a large pot, bring chicken broth to a boil.
Add the diced vegetables and meatballs to the pot. Reduce heat and let simmer for 20 minutes.
If using pasta, add it to the pot and cook according to package instructions.
Once the meatballs are cooked through and the vegetables are tender, remove from heat.
Serve hot, garnished with fresh parsley.
