  • 2 cups jasmine rice
  • 1 lb chicken breast, diced
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp ginger, grated
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  3. Add the diced chicken and cook until browned.
  4. Stir in the bell pepper, turmeric, salt, and pepper.
  5. Add the rinsed rice, coconut milk, and chicken broth to the pot.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
  7. Fluff the rice with a fork and let it sit for a few minutes before serving.
