A delicious vegan dish combining the sweetness of pineapple with savory tofu, perfect for a satisfying dinner.

Ingredients

  • 1 block firm tofu, pressed and cubed
  • 1 cup fresh pineapple, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a bowl, mix soy sauce, maple syrup, garlic, ginger, salt, and pepper.
  3. Add the tofu cubes to the marinade and let it sit for at least 15 minutes.
  4. Heat olive oil in a pan over medium heat and add the marinated tofu.
  5. Cook until golden brown on all sides, about 8-10 minutes.
  6. Add the sliced bell pepper and diced pineapple to the pan.
  7. Sprinkle cornstarch over the mixture and stir well to combine.
  8. Cook for an additional 5 minutes until the bell pepper is tender and the sauce thickens.
  9. Serve hot over rice or quinoa.

Notes

  • For extra flavor, add sesame seeds on top before serving.
  • This dish can be served with steamed vegetables for a complete meal.
  • Adjust the sweetness by adding more or less maple syrup according to your taste.
