- 1 block firm tofu, pressed and cubed
- 1 cup fresh pineapple, diced
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Press the tofu to remove excess moisture, then cut it into cubes.
- In a bowl, mix soy sauce, maple syrup, garlic, ginger, salt, and pepper.
- Add the tofu cubes to the marinade and let it sit for at least 15 minutes.
- Heat olive oil in a pan over medium heat and add the marinated tofu.
- Cook until golden brown on all sides, about 8-10 minutes.
- Add the sliced bell pepper and diced pineapple to the pan.
- Sprinkle cornstarch over the mixture and stir well to combine.
- Cook for an additional 5 minutes until the bell pepper is tender and the sauce thickens.
