Ingredients

  • 2 cups all-purpose flour
  • 1 cup sourdough discard
  • 1/2 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • Coarse sea salt for topping

Instructions

  1. In a large bowl, mix the flour, sourdough discard, warm water, sugar, and salt until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth.
  3. Let the dough rest for 30 minutes, covered with a damp cloth.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Divide the dough into 8 equal pieces and roll each piece into a long rope.
  6. Shape each rope into a pretzel shape and place on the prepared baking sheet.
  7. In a pot, bring 4 cups of water to a boil and add the baking soda.
  8. Boil each pretzel for about 30 seconds, then remove and place back on the baking sheet.
  9. Sprinkle with coarse sea salt and bake for 12-15 minutes until golden brown.
  10. Let cool slightly before serving.
