  • 2 ripe bananas, mashed
  • 1/2 cup sugar

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the sourdough discard, mashed bananas, sugar, melted butter, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
