  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (optional)
  • Wood chips for smoking (hickory or oak)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.
  3. Rub the tri-tip roast with olive oil and then coat it evenly with the spice mixture.
  4. Let the seasoned tri-tip sit at room temperature for about 30 minutes.
  5. Place the wood chips in the smoker and add the tri-tip to the smoker.
  6. Smoke the tri-tip for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  7. Remove the tri-tip from the smoker and let it rest for 10-15 minutes before slicing.
  8. Slice against the grain and serve with your favorite BBQ sides.
