  • 4 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the beef short ribs with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat and brown the short ribs on all sides.
  3. Transfer the browned ribs to the slow cooker.
  4. Add chopped onion and minced garlic to the skillet and sauté until softened.
  5. Stir in beef broth, red wine, tomato paste, Worcestershire sauce, and thyme; bring to a simmer.
  6. Pour the mixture over the short ribs in the slow cooker.
  7. Cover and cook on low for 8 hours or until the meat is tender.
  8. Serve hot with your choice of sides.
