A delicious and easy recipe for roasted sweet potatoes tossed in garlic and parmesan cheese, perfect as a side dish.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the cubed sweet potatoes, olive oil, minced garlic, salt, pepper, and thyme.
  3. Toss until the sweet potatoes are evenly coated.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
  6. Remove from the oven and sprinkle with grated parmesan cheese.
  7. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
