Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes, onion, and garlic with olive oil, salt, and pepper.
  3. Spread the mixture on a baking sheet and roast for 25-30 minutes until tender.
  4. Transfer the roasted vegetables to a pot and add the vegetable broth and Italian herbs.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
