  • 1 large head of cauliflower, chopped
  • 2 cups shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup sliced pepperoni (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the chopped cauliflower with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
  4. In a large casserole dish, layer the roasted cauliflower, marinara sauce, mozzarella cheese, and Parmesan cheese.
  5. If using, add the sliced pepperoni on top.
  6. Bake in the oven for an additional 15-20 minutes until the cheese is bubbly and golden.
