Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1 avocado, sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, spinach, and avocado.
  6. Add the cooled quinoa to the vegetable mixture.
  7. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  8. Toss gently to combine all ingredients.
  9. Top with feta cheese if desired and serve immediately.

Notes

  • Quinoa can be cooked in advance and stored in the refrigerator.
  • Feel free to add any other vegetables you like.
  • This dish can be served warm or cold.
