  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add cherry tomatoes and spinach; sauté for 2-3 minutes.
  6. Stir in chickpeas, garlic powder, salt, and pepper; cook for another 2 minutes.
  7. Fluff the quinoa with a fork and serve topped with the sautéed mixture.

Notes

  • Feel free to add your favorite vegetables.
  • For added protein, consider adding grilled chicken or tofu.
  • This dish can be served warm or cold as a salad.
