A quick and flavorful unstuffed pepper skillet meal that combines all the classic flavors of stuffed peppers without the hassle of stuffing them.

  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup rice, uncooked
  • 2 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped bell peppers, onion, and garlic to the skillet and sauté until the vegetables are tender.
