Ingredients
Scale
1 cup pumpkin puree
1 cup sugar
1/2 cup vegetable oil
2 large eggs
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
8 oz cream cheese, softened
1/2 cup butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, mix together pumpkin puree, sugar, vegetable oil, and eggs until well combined.
In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
While the bars are baking, prepare the cream cheese frosting by beating together cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
Once the bars are cool, spread the cream cheese frosting evenly over the top.
Cut into squares and serve.
Notes
Store leftovers in the refrigerator for up to 5 days.
These bars can be frozen for up to 3 months without frosting.
For added flavor, consider adding chopped nuts or chocolate chips to the batter.
