Delicious and easy-to-make peanut butter oatmeal cookies that require no chilling time.

Ingredients

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter and brown sugar until smooth.
  3. Add the egg and vanilla extract, mixing well.
  4. Stir in the rolled oats, baking soda, and salt until fully combined.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a chewier texture, do not overbake.
  • Feel free to add chocolate chips or nuts for extra flavor.
