Ingredients

  • 400g pasta (spaghetti or rigatoni)
  • 150g guanciale, diced
  • 2 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 100ml white wine
  • 50g grated Pecorino Romano cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente.
  2. In a large skillet, cook the diced guanciale over medium heat until crispy.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the white wine and let it simmer for a few minutes until reduced.
  5. Add the crushed tomatoes and season with salt and pepper. Let the sauce simmer for about 10 minutes.
  6. Drain the pasta and add it to the skillet with the sauce, tossing to combine.
  7. Serve hot, topped with grated Pecorino Romano cheese and fresh basil.
