- 4 cups broccoli florets
- 1 cup shredded carrots
- 1/2 cup chopped onion
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups vegetable broth
- 2 cups half-and-half
- 3 cups shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- In a large pot, melt butter over medium heat. Add onions and carrots, sauté until softened.
- Stir in flour and cook for 1-2 minutes.
- Gradually whisk in vegetable broth, bringing to a simmer.
- Add broccoli and cook until tender, about 10 minutes.
- Stir in half-and-half, cheese, salt, pepper, and nutmeg until cheese is melted and soup is creamy.
- Serve hot, garnished with additional cheese if desired.
