A delicious and creamy copycat version of Panera’s famous Broccoli Cheddar Soup, perfect for a cozy meal.

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups vegetable broth
  • 2 cups half-and-half
  • 3 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and carrots, sauté until softened.
  2. Stir in flour and cook for 1-2 minutes.
  3. Gradually whisk in vegetable broth, bringing to a simmer.
  4. Add broccoli and cook until tender, about 10 minutes.
  5. Stir in half-and-half, cheese, salt, pepper, and nutmeg until cheese is melted and soup is creamy.
  6. Serve hot, garnished with additional cheese if desired.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Can be stored in the refrigerator for up to 3 days.
  • Freezes well for up to 3 months.
