A delicious copycat recipe of the famous Olive Garden Chicken Gnocchi Soup, featuring tender chicken, fluffy gnocchi, and a creamy broth.

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, garlic, carrots, and celery; sauté until vegetables are tender.
  3. Stir in thyme and parsley, cooking for an additional minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and cook according to package instructions.
