1 cup all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin puree
1 teaspoon vanilla extract
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract (for frosting)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, whisk together the oil, eggs, pumpkin puree, and vanilla extract.
Combine the wet ingredients with the dry ingredients and mix until just combined.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
While the bars are baking, prepare the cream cheese frosting by beating together the cream cheese, butter, powdered sugar, and vanilla extract until smooth.
Once the bars are cool, spread the cream cheese frosting evenly over the top.
Cut into squares and serve.
Notes
Store leftovers in an airtight container in the refrigerator.
These bars can be frozen for up to 3 months without frosting.
For added flavor, consider adding chopped nuts or chocolate chips to the batter.
