  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Add the pumpkin puree, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the bars are baking, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth.
  7. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  8. Once the bars are cool, spread the cream cheese frosting evenly over the top.
  9. Cut into squares and serve.
