  • ½ teaspoon instant yeast

Instructions

  1. In a large bowl, mix the rye flour, all-purpose flour, salt, and instant yeast.
  2. Add warm water and stir until a shaggy dough forms.
  3. Cover the bowl with plastic wrap and let it rest at room temperature for 12-18 hours.
  4. After resting, the dough should be bubbly and have risen significantly.
  5. Preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat up.
  6. Carefully transfer the dough onto a floured surface and shape it into a ball.
  7. Once the Dutch oven is hot, place the dough inside (you can use parchment paper for easier transfer).
  8. Cover and bake for 30 minutes, then remove the lid and bake for an additional 15-20 minutes until golden brown.
  9. Let the bread cool on a wire rack before slicing.
