  • 1 cup orzo pasta

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  3. Add the chicken to the skillet and cook until browned on both sides, about 5-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. Add the orzo pasta and chicken broth to the skillet, stirring to combine.
  6. Bring to a boil, then reduce heat to low and cover, cooking for about 10 minutes.
  7. Add the cherry tomatoes and spinach, stirring to combine.
  8. Return the chicken to the skillet, cover, and cook for an additional 5-7 minutes, or until the chicken is cooked through.
  9. Sprinkle mozzarella cheese on top, cover, and let it melt for a few minutes before serving.
